THE RICH, MILD ONE
Chicken Korma
Tender halal chicken slow-simmered in a silky cashew and coconut sauce. The mildest, richest curry on the menu: comfort first, heat only if you ask for it.
The One From the Royal Kitchens
Korma started in the Mughal court kitchens, where braising meat slowly in yogurt, cream and ground nuts was how you cooked for royalty. Ours keeps that idea honest: chicken simmered gently in a sauce built on ground cashews and coconut, finished with cream. No chili shock, no shortcuts, just the deepest, smoothest gravy we make. If butter chicken is the crowd favorite, korma is the one regulars quietly swear by.

Cashew and Coconut Do the Work
The body of the sauce is ground cashew and coconut, cooked down in pure ghee with gentle whole spices, then rounded out with cream. That’s why it tastes rich without being heavy-handed. Heads up for allergies: this is the one entree on our menu with nuts in it (cashew and coconut). Like every entree we make, it is gluten free and certified halal.
How We Make It
1
Gentle Masala
Onions, ginger and garlic cooked soft in pure ghee with cardamom and bay, never scorched.
2
Cashew-Coconut Silk
Ground cashews and coconut go in and simmer down to the smooth, rich base korma is known for.
3
Slow-Simmered Chicken
Certified-halal chicken cooks gently in the sauce until tender. Mild by default; spice it 1 to 5 if you want.
Make It a Meal
Complimentary basmati rice comes with every entree. Butter naan was made for a sauce like this.

Why Ours Is Different
We’re Arizona’s first seed-oil-free Indian restaurant: everything is cooked in pure ghee or avocado oil, with no artificial colors and certified halal meat. The korma gets the full ghee treatment, which is exactly why the sauce tastes the way it does.
