What Is Chicken Tikka Masala?
It starts with tikka, chunks of chicken marinated in yogurt and spices, then grilled in the tandoor until the edges char. Those pieces go into a masala sauce of tomato, onion, cream, and a warm spice blend. The story goes it was first pulled together in a British curry house decades ago, and it has been one of the most ordered Indian dishes in the world ever since. It is bolder and a touch tangier than butter chicken.
Tikka, Then Masala
The name says it all. First the tikka: chicken marinated in yogurt, ginger, garlic, and spice, then char-grilled in the tandoor so it picks up real smoke. Then the masala: a tomato and cream sauce built on onions, Kashmiri chili, and a blend of warm spices. The grill char is the part most kitchens skip. We do not. And that color comes from tomato and Kashmiri chili, never dye.

Chunks of chicken sit in a yogurt and spice marinade so they turn out tender and full of flavor.
